Craving a tasty quinoa bowl today? This quinoa bowl is of one my favorite recipes to make, especially when I need to make something quick and tasty.
For the quinoa ingredient, I chose Ancient Harvest Grain (Harmony Blend), it’s a combination of organic white, red & black quinoa.
What I also like about this organic quinoa brand is there is no need to rinse the quinoa. Quinoa is a good source of protein, iron, manganese, just to name a few. This super food seed is nutty in texture and mild in flavor.
The combination of the quinoa with the beans, fresh cilantro, fresh tomato salsa makes this a fresh, tasty, easy go to meatless dish you can make anytime.

- ½ cup quinoa
- 1 Cup water
- 1 Large Tomato
- 1 small onion
- 1 clove garlic, minced
- 1 Tbsp. cilantro, chopped
- 1 Tsp. fresh lemon juice
- 1 Cup Black Beans
- dash of cumin
- ½ cup corn
- ½ of an avocado, thinly sliced
- Handful of shredded cheese
- Handful of shredded lettuce (optional)
- For Salsa:Mix tomato, onion, garlic, cilantro, lemon in a bowl. Cover bowl with a plastic wrap. Place bowl in the fridge to chill.
- For Quinoa:Add ½ cup of quinoa and 1 cup of water in a saucepan, bring to a boil. Cover pan with a lid, simmer for 15- 20 minutes.
- For Beans:When quinoa has about 6 minutes left, heat a pan on low to medium heat, add beans. Cover pan with a lid, simmer for 5 minutes. Turn off heat, add a dash of cumin to beans.
- Place quinoa, beans, cheese, avocado, corn, salsa. Mix together. Enjoy!
