Quinoa Salad Recipe
This quinoa salad is filled with mixed lettuce greens, sun-dried tomatoes, & walnuts. The tasty balsamic vinaigrette dressing is a perfect match to this crunchy, delicious quinoa salad.
For the quinoa ingredient, I used Ancient Harvest. Quinoa is a good source of protein, fiber, iron, manganese, just to name a few.
This quinoa salad with lettuce greens is a simple go-to salad for anytime of the day. You can also make a large batch of this salad and place in small containers and store in the fridge. Whenever you’re craving a healthy dish at anytime, you can just grab your quinoa salad from the fridge anytime.

- 1/2 Cup Dried Quinoa
- 1 Cup Water
- 2 Cups Lettuce, chopped
- 1/8 Cup Red Onions, thinly sliced
- A handful of Sun-dried tomatoes or 1 small tomato, chopped
- A handful of Walnuts
- Salad Dressing:
- 2 tsp. Balsamic vinegar
- 2½ tsp. olive oil
- Add 1/2 cup of quinoa and 1 cup of water in a saucepan, bring to a boil. Cover pan with a lid, simmer for 15- 20 minutes. Turn off heat. Let quinoa cool for few minutes.
- When quinoa is cooled, place quinoa in a large bowl. Add half of the dressing. Add lettuce, red onions, tomatoes, walnuts. Add the rest of the salad dressing. Mix all ingredients in the bowl together.
